IngredientsMarinade
1 package of tofu
1/2 cup soy sauce
1/2 cup orange juice
1 tsp. minced garlic
1 tsp. fresh grated ginger
Sauce
2 cups frozen peaches
1 Tbsp. grated ginger
1/4 cup sugar
Crust
1/2 cup *macadamia nuts
1/4 cup panko (japanese bread crumbs)
1 tsp. toasted sesame oil
*other nuts can be substituted for macadamia. (i.e., pecans, almonds, peanuts)
Directions
1. Combine marinade ingredients.
2. Place tofu on its side and slice into three even pieces and place in marinade for 15 minutes.
3. Remove and place onto baking pan and bake in preheated 350- degree oven for 40 minutes.
4. Meanwhile combine sauce ingredients in a small sauce pan and heat over low until peaches are soft.
5. Remove sauce ingredients and place in blender and puree until smooth then set aside.
6. For the macadamia crust combine ingredients in a food processor and blend until the nuts are chopped and incorporated into the panko.
7. Remove tofu from oven and top with the nut mixture and place back in oven for 10 minutes or until crust is golden brown.
8. Top with sauce and serve. (Makes 3 portions.)
