    Just about any sandwich shop around town has its own version and ingredients of chicken salad ranging from the standard mayo and celery to creative and quirky.

    So why such universal appeal?

    "It's a healthy thing," says Joan Buchanan, owner of the Swamp Rabbit Station in Travelers Rest. "It's light and a lot of it has to do with the flavor and consistency."

    The Swamp Rabbit was previously a coffee shop, but the recent introduction of a small lunchtime menu has already earned them a loyal fan base for their chicken salad. "We don't have a lot but what we have is tops," says Buchanan.

    Though Buchanan oversees the operations, it's actually her sister-in-law's sister Bonnie Ballard who gets credit for the successful recipe.

    "I've always loved chicken salad," says Ballard, who also owns a catering company, "I just kept playing around with it. I found out the best way is to pressure cook the chicken. It just makes it so tender and juicy."

    She goes on to stress that it's not only the preparation style that's crucial to a good salad but also the type of chicken.

    "I don't buy that skinless, boneless kind," says Ballard, "It's just bone- in chicken breast with the skin on it; you boil and it just gives it that rich taste. Everybody loves it."

  • Hours: 8 a.m.-5 p.m., Monday to Friday (lunch served from 11 a.m- 2 p.m.)
  • Details: The chicken salad sandwich comes on a croissant, white, wheat or sesame roll. Get just the sandwich, or half-sandwich plus one side, or as a platter (with crackers, pickles, olives and cheese chunks on a bed of lettuce). Other choices are ham, turkey breast, lean roast beef and macaroni salad. Lots of different coffees, teas and smoothies to sip on too. Wireless Internet. Drive-thru for call-ins. Also on the premises is Buchanan's floral design studio and boutique.
  • History: Used to be the old Renfrew Bleachery office (for the nearby mill). It took Joan and her husband several years to restore it.
  • Did you know: Buchanan says the Swamp Rabbit was a train that used to transport passengers from Marietta to downtown Greenville back in the 1800s.
  • Location: Take U.S. 276 through downtown Travelers Rest until you see Renfrew Church on your left. Take the next left and you'll see Swamp Rabbit Station 150 yards on your right.
  • Insider info: Buchanan and Ballard say that chicken salad's arch-nemesis, tuna salad, will be an addition to the menu in the future.
