Ingredients
1 cup sharp cheddar cheese
6 Idaho potatoes
1/2 cup sour cream
1/4 cup mayonnaise
1/2 small red onion julienne
1 tablespoon chopped cilantro
Salt and pepperDirections
1. Peel and cube potatoes, then cook until tender.
2. Let cool and throw in the cheese.
3. Combine sour cream and mayonnaise and then mix in red onion.
4. Add the cilantro then sprinkle with salt and pepper.
5. Stir well and let chill.
6. Feeds six to eight people. Goes great with any type of barbecue.
